Tunisian inspired sundowner snacks

WORDS by SHARA BURGER | IMAGES by SHARA B PHOTOGRAPHY

It is not only the Gin and Tonics that play a big part in a fabulous sunset stop on safari, or even the actual sun setting! Sometimes the snacks can be just as inspiring.

With so many talented chefs working at Tanda Tula, there is always something delicious coming out of the kitchen. These roast Harissa potatoes on a stick prove just that. They can be enjoyed as a main meal, accompaniment or a delicious snack with your sundowner drink.

Ingredients for Harissa paste:

  • 1 garlic clove
  • salt
  • 1 tbs tomato paste
  • 1 tbs fresh lemon juice
  • 1 tbs chili powder
  • 1 tbs smoked paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground coriander
  • 1/4 tsp ground cumin
  • 1/4 tsp caraway seeds, ground
  • 1/4 cup olive oil baby potatoes
  • 2 tbs extra-virgin olive oil

Method: * To make the Harissa paste,

  1. Place all the ingredients in a blender and pulse until combined, taste and if need adjust to taste. Put in a jar and keep in fridge, will last up to one week.
  2. Place the potatoes in a baking dish, drizzle with olive oil and roast at 180 C for 1 hour.
  3. Toss the potatoes in the Harissa paste when still warm and serve.
